Tasty Carrot and Pork Congee

When my kids were in their pre-teeth stages, I was told by my mum and grandma to start the long journey of preparing porridge for them everyday as an addition to their diet which, before this, consisted only of milk. So that was what they would eat every single day - the same old same old simply because I could not think of any other variation to the plain porridge cooked in the slow cooker in a ikan billis broth with small pieces of fish and chopped up spinach. They must have been so bored of that, because as soon as they could eat other foods, such as pasta and rice, they completely rejected porridge. I cook my children porridge occasionally even now because it is a technique that is really easy to execute. I always say that if you can't even cook porridge or congee right, then perhaps you don't belong in the kitchen. It was only recently that I thought of adding tomatoes to porridge for that added sweet and tart flavour. This variation of the congee is perfect for young children, and easy for mummies too!

You will need~ (serves two little ones) - half a carrot (chopped up) - 1 small tomato (chopped up) - 2 garlic cloves (chopped up) - 1/2 cup jasmine rice (washed) - 250g of ground meat of any kind - 2 cups of chicken broth (water will do fine too) - 1/2 cup of tomato sauce (or tomato puree) - 3 teaspoons of sugar

Whip out your chopping board and start working on the carrot, tomato, and garlic cloves. Dice them as small as you can and throw them into the slow-cooker pot. Add the chicken broth and ground meat in with the chopped up trio of vegetables and leave to cook for an hour and a half. Pour in the jasmine rice and tomato sauce, mix well and leave to cook for another hour and a half. Before serving, spoon in the 3 tablespoons of sugar and you should have a fantastic tasting congee! Congee doesn't have to be plain and boring, this colourful and tasty carrot and pork congee will make a wonderful addition to your child's menu.
Ingredients
  • half a carrot (chopped up)
  • 1 small tomato (chopped up)
  • 2 garlic cloves (chopped up)
  • 1/2 cup jasmine rice (washed)

  • 3 teaspoons of sugar
Instructions
