Sweet and Sour Chicken

Sweet and sour chicken - a staple dish in chinese restaurants everywhere. Of course, there are many other types of protein that pair superbly well with the delightful sweet and sour sauce, it can be 'sweet and sour fish', 'sweet and sour pork', 'sweet and sauce prawns', whichever you feel like having for dinner that night. I had this sweet and sour chicken for dinner today - just ladle the chicken pieces together with the thick, sticky and strikingly coloured sauce over a bowl of steamed jasmine rice. Boy, you can easily break that diet by having one bowl of rice after another. You won't have to break the bank to cook this up though, I assure you that you would have most, if not all, of the ingredients needed to make this sweet and sour chicken already sitting pretty in your kitchen pantry. If you choose to use pork, or fish or prawns instead, cook them in the same way as the chicken, as instructed below.

Well, today I was under a whole lot of pressure cooking this dish as my 2 year-old happened to be in a super grumpy mood and insisted on standing in the kitchen and watching me cook. She was making those 'on the verge of crying' type whiny noises and I had to keep telling her "okay, mummy's making dinner, I'm almost done, almost done" to keep her from bursting into tears. I couldn't not cook and hold her, because I knew the reason she was in such foul mood was partly because she was hungry and ready for dinner. So I gritted my teeth and made sure not to rush through the cooking process as the frying of the chicken is an extremely delicate process, and I could not afford to have my chicken burnt. Now look at what I managed to cook! A perfect sweet and sour chicken dish! It was a good kitchen day for me, and here's hoping you will have one too when you get busy on this keeper of a recipe.

Sweet and Sour Chicken

You will need~ For the Chicken: - 2 piece of Chicken breast (cut into bite-sized cubed pieces) - 1 Tablespoon Soy sauce - 1 cup Plain flour + 1 cup Cornflour (mixed together) - 1 medium Egg - 4 cups of Canola oil (or any other type of veg oil) For the sauce - 1 medium Red pepper (diced) - 1 medium Onion (cut into quarters) - 1 cup Tomato ketchup - 1/2 cup White vinegar - 1 Tablespoon Soy sauce - 1/2 Tablespoon Sugar - 1 teaspoon Cornflour (mixed in some hot water) - 1/4 cup Water

Chop the chicken breast up into cubed pieces and marinate in 1 tablespoon of soy sauce. Set aside, while you set up the breading station - (1) Combined flour (2)Beaten egg mixture. This is how you will bread the chicken pieces - coat in the flour first, then dip into the egg mixture, then another coat of flour, before going into the hot oil. At this point, prepare the oil for frying, and when the oil is hot enough with bubbles forming and all, start frying your chicken pieces in batches. Take note to have the chicken drained as much as possible of excess oil when you take them to surface. I did this by setting a round colander net atop a layer of kitchen napkins set on a plate. When all the chicken has been fried to a perfect golden brown colour, set it all aside and get started on the sauce.

Combine the tomato ketchup, white vinegar, soy sauce and sugar in a bowl. Place a large skillet on the stove and heat up a tablespoon of oil. When the oil is hot enough, throw in the red pepper pieces and onion and stir them around until fragrant. Next, lower the fire and slowly pour in the sauce mixture. It will start to sizzle, which is your cue to add in the 1/4 cup of water as well. Stir the sauce around for a bit (about a minute), and then introduce the cornflour that has been mixed in some water, this will thicken the sauce up a little. Finally, add the fried chicken pieces into the skillet with the sauce and mix together until the chicken pieces are now gleaming with a shiny coat of delicious sauce. Serve with rice, and enjoy!
