A classic Chinese favourite, this dish looks like one you would have for breakfast with a couple of sausages and baked beans, BUT it goes perfectly with steamed rice and it's often cooked in Chinese households. Personally, I must have cooked stir-fried tomato with egg like a thousand times. Because it's so easy and can be completed with staple ingredients in the pantry, it is one of my favourite go-to dishes for occasions when I feel that the dinner spread that particular evening is not enough to satisfy everyone's appetite. After all, who doesn't like eggs?

In this recipe, one that I have perfected over time, the tomatoes are cooked first with some sugar and a bit of water to soften and also to bring out their natural sweetness. After cooking the simmering the tomatoes for a couple of minutes, the beaten egg mixture is poured over the tomatoes and do take note at this point to continuously stir and fold the egg over and over so that they turn out soft and fluffy. This is a really simple and delicious way to cook eggs and they are absolutely fantastic when eaten with piping hot steamed white rice. If you have children who refuse to eat tomatoes, this is also a great way to sneak some into their diet ;)

  Stir-fried Tomato with Egg   Prep time: 5 mins  Cook time: 10 mins  Total time: 15 mins  Serves: 4      Ingredients:   · 3 Eggs  · 1 medium Tomato  · 1-1/2 tablespoons Sugar  · 1/4 cup Water  · pinch of Salt  · 2 tablespoons Vegetable oil     Instructions:  1) Dice the tomatoes and set aside.  2) In a medium bowl, beat the eggs and throw in the pinch of salt to slightly  season.  3) You are now ready to start cooking - heat up the oil in a pan and throw in  the diced tomatoes, saute for a couple of minutes before adding the sugar  and water, let the mixture simmer until the water has lessened to half its  original amount.  4) At this point, pour the egg mixture over the tomatoes and start stirring and  folding the mixture consistently.  5) After about a minute, turn the fire off and transfer the completed dish  immediately onto a platter.  6) Serve with steamed white rice and enjoy!
