I have been hooked on a particular Korean cooking reality show for the past couple of weeks and the result of this obsession is my craving for Korean food. Just last week alone I made Bibimbap twice for dinner AND a huge pot of spicy vegetarian korean stew on a separate day for the husband and me. It doesn't seem like this craving for all food Korean is slowing down any time soon either, because last night I had the inspiration to come up with this spicy korean chilli paste (or Gochujang) Squid, which tastes AWESOME, by the way.

This dish is really really quick to make - just 10 minutes of prep time spent on cutting the onions, spring onions, ginger and chillies, removing the skin and cleaning the insides of the squid and mixing the sauce, followed by 5 minutes of cooking the ingredients over high heat on the stove. The sauce is spicy and sweet, and the squid crunchy with a refreshing citrus taste thanks to the freshly squeezed lemon juice. It is perfect for a super quick and hearty meal with steamed rice - just drizzle that sauce over your rice and take bite after bite of the delicious squid and onions, you will definitely make this again soon!

  Spicy Korean Chilli (Gochujang) Squid   Prep time: 15 mins  Cook time: 15 mins  Total time: 30 mins      Ingredients:   · 450g Squid  · 2 fresh Red Chillies  · 1 medium Yellow Onion  · 1 knob Ginger  · 1 bunch Spring/Green Onions (for garnish)  · Juice of 1/2 Lemon   For the Sauce:   · 2 tablespoons Gochujang/Korean Chilli Paste  · 1 tablespoon Soy Sauce  · 2 teaspoons Sugar  · 2 teaspoons Water  · 4 cloves of Garlic (minced)      Instructions:   1) Whip out that chopping board and let's get to work - remove the seeds of  the red chillies and chop it up into inch-long pieces. Slice the yellow onion,  ginger and the spring onions, and set all these aside.  2) This next part is where it gets dirty - remove the skin and the insides of the  squids, and cut it up into square pieces, lightly scoring the surface with your  knife, this will give you the beautiful checkerboard design when it cooks and  curls up.  3) Squeeze half of a lemon over the squid pieces and toss to coat evenly. Set  the squid aside for now as well.  4) Mix the Gochujang (Korean chilli paste), soy sauce, sugar, water and minced  garlic together in a bowl.  5) Now it's time to get your skillet nice and hot. Heat up a large skillet with 2  tablespoons of any type of vegetable oil and when the oil is hot, throw in the  ginger, chillies and onion slices.  6) Saute them for about 30 seconds, before  adding the squid.  6) Stir all the ingredients around for a minute and slowly pour in the sauce. 7et  cook for another minute, before turning off the fire.  8) Serve with steamed white rice, and enjoy!
