Crunchy, spicy and slightly sour, radish kimchi will definitely whet your

appetite

Let me just say first, I am not Korean. But I enjoy Korean food and in the past 2-3 years I have been trying out various popular Korean dishes to satisfy my own cravings after watching K-dramas and other shows. One such show that I had been watching was "Three Meals a Day: Fishing Village". Boy, did that show get me hungry!

I always made it a point NOT to watch it at night as I was always so tempted to eat together with them; the food that Cha Seung Won cooked in the show looked so good! 6-7 episodes in, I noticed that one type of kimchi was always on the dinner table for the guys in the show - Radish Kimchi or kkadugi. I attempted to make my own radish kimchi, roughly based on how it was made in the show and it came out pretty tasty. Since then, I would prepare a batch of this crunchy kimchi once every 2 months or so and keep it in the fridge for me to indulge in whenever I feel like it. The recipe might not be the most authentic but it really makes for a mouth-watering appetiser and welcome addition to the dinner table.

The measurement for fish sauce is not exact; this is because you need to taste the mixture before deciding if you would prefer it to be saltier according to your personal preferences. Prepare a pair of gloves for use when you toss everything together.

  Radish Kimchi   Prep time: 10 mins  Total time: 10 mins  Serves: 10-12      Ingredients:   · 1 medium Radish, cut into small cubes  · ½ Asian Pear, grated (use Pear Juice if you can't find this fruit)  · 6-8 cloves Garlic, grated  · 2-inch knob fresh Ginger, grated  · 2 stalks Spring Onion, cut into 2-inch strips  · ½ cup Chilli Pepper Flakes  · 3-4 tablespoons Fish Sauce  · 2 tablespoons Sugar  · 3 tablespoons Sesame Oil  · 1/8 cup Toasted Sesame Seeds     Instructions:  1) Place the cubed radish in a large mixing bowl.  2) Mix all the other ingredients, except the sesame seeds, in a separate bowl,  combining thoroughly to create the seasoning paste.  3) Pour the seasoning paste into the bowl with the radish cubes and toss   the radish (with your gloved hand!) to coat thoroughly with the seasoning   paste.  4) Sprinkle the sesame seeds over the radish kimchi and transfer kimchi   into an airtight container to store in the fridge.
