I've recently been obsessed with cooking with peas, and have been incorporating them as much as possible into my daily cooking - frying rice for dinner? Throw in a cup of peas. In the mood for some broth-y chicken pasta soup? Peas away! Quick stir-fried pork with onions? Oh, let's throw in some peas for colour. Fortunately, my daughter loves peas and my son tolerates them so I get to carry on with my pea-obsession. For pasta day this last week of February, I decided to whip up a quick one-pot pasta with fresh prawns, fragrant basil and bright summery green peas in a sweet-savoury tomato sauce.

Because I did not want my prawns to be overcooked, I sautéed them really quickly first in the pot in olive oil, then fished them out to rest on the sidelines while I cooked everything all in that same pot. This entire dish is really really simple to execute and is ready from preparation stage to the plate in less than 20 minutes. I used Curly pasta this time because I absolutely ADORE them, they're so lovely to look at and their curls really absorb the flavourful sauce, but of course, you can use any other types of pasta.

This one-pot prawns, peas and basil tomato pasta is perfect for a quick dinner for the entire family. I do hope you enjoy it!

  One-Pot Prawns, Peas and Basil Tomato Pasta   Prep Time: 10 minutes  Cooking Time: 15 minutes  Total Time: 25 minutes  Serves: 4      Ingredients:   · 1 can (14.5oz/411g) Diced Tomatoes    · 2 cups Chicken broth  · 1 cup Water   · 250g any type of Pasta  · 2 cups Green Peas  · 10-12 Prawns  · 4 cloves Garlic  · 1 medium Onion   · handful of fresh Basil    · 3 tablespoons Olive Oil  · 3 teaspoons Sugar   · 2 teaspoons Salt  · dash of Black Pepper      Instructions:   1) Start by removing the shells and veins of the prawns and season with 2  teaspoons of salt, set aside.  2) Dice the onion and mince the garlic.  3) In a large pot, pour in 1 tablespoon of olive oil and when the oil is hot,   throw in the prawns and saute until the prawns have just turned a light pink  in colour before removing. Set aside.   4) In the same pot, add another 2 tablespoons of olive oil and saute the   garlic and onions for about 1 minute.   5) Next, throw in the peas and let cook with the garlic and onions for   another minute.   6) The next step is to add the chicken broth, water and diced tomatoes in   with the garlic, onions and peas.  7) Once the mixture has come to a boil, add the pasta and cook until al  dente.  8) Serve the pasta with some shredded fresh basil and enjoy.

Total Time: 25 minutes

Serves: 4

· 1 can (14.5oz/411g) Diced Tomatoes  

· 2 cups Chicken broth

· 1 cup Water

· 250g any type of Pasta

· 2 cups Green Peas

· 10-12 Prawns

· 4 cloves Garlic

· 1 medium Onion

· handful of fresh Basil  

· 3 tablespoons Olive Oil

· 3 teaspoons Sugar

· 2 teaspoons Salt

· dash of Black Pepper

 

Instructions:

1) Start by removing the shells and veins of the prawns and season with 2

3) In a large pot, pour in 1 tablespoon of olive oil and when the oil is hot,

5) Next, throw in the peas and let cook with the garlic and onions for

with the garlic, onions and peas.

7) Once the mixture has come to a boil, add the pasta and cook until al

dente.

8) Serve the pasta with some shredded fresh basil and enjoy.
