Garlic Toast is something that I personally absolutely love. I have it with a delicious soup (such as this great Broccoli soup), as a side dish to steak or on its own for tea with a hot cup of coffee. Before I started making my own garlic butter, I used to buy garlic toast straight off the shelves of my local bakery. Those were good, but being a garlic-lover, I really preferred to have more garlic on my toast, as a result of my dissatisfaction with what was available to me in the bakeries, I started experimenting with making my own custom garlic butter.
This finalised garlic butter recipe is one that I am extremely satisfied with - the amount of minced garlic in it is to my liking, it is slightly sweet and it goes well with any type of dried herbs, be it Thyme, Rosemary, Oregano, Italian Herbs mix, Parsley (trust me, I've tried every single one and they were all damned yummy!). As to the amount of garlic to mix in with the butter, for a big garlic lover like myself, I diced up 14 cloves of garlic to 120g of unsalted butter. If you prefer to have less garlic, I would advise at least 8 garlic cloves to the same amount (120g) of butter so that the garlic is equally distributed and you will definitely get that garlic taste in every bite. I store the finished garlic butter in a used glass bottle (ones that used to hold pickles, mayo or olives) in the fridge, ready for use any time I feel like having a delicious slice of garlic toast. You can speed up the preparation process by mincing up the garlic in a food processor, but personally I find that chopping up garlic by hand is very therapeutic and I just love the aroma that is released with each 'chop'. You will never have to buy garlic bread/toast from your local bakery anymore with this wonderful garlic butter recipe!
