Crazy Creamy Tomato Pasta

It's pasta for dinner again at my household and today I decided to go decadent with a craaaaaazy creamy tomato sauce paired with spaghetti. The creaminess of the sauce is attributed to the richness of Mascarpone and I incorporated this sauce with a handful of sweet prawns cooked in a garlic butter, and the result was truly spectacular. I don't even want to delay sharing this fantastic recipe with you any longer by sharing too much redundant text here in this post, you gotta get started on this recipe right away! It's THAT good!

Crazy Creamy Tomato Pasta

You will need~ - 400g of Spaghetti (or any other types of pasta) - 300g of prawns (shelled and de-veined) - 6 cloves of garlic (finely chopped up) - 2-1/2 cups of of Tomato sauce or blended diced tomatoes - 3 Tablespoons of Mascarpone - 2 Tablespoons of Sugar - 3 teaspoons of Salt - 1 Tablespoon of unsalted Butter - 2 Tablespoons of Olive oil

Get a big pot of water on the stove, and turn the fire on high to have it at boiling point more quickly. While waiting, shell and de-vein the prawns and set them aside. Finely chop up the garlic, and blend the diced tomatoes (if you are using those). When the prep work is completed, heat up a large flat skillet and pour in the Olive oil and the tablespoon of unsalted butter. Throw in the chopped garlic and sauté until fragrant. I've said it before - the smell garlic cooking in butter is simply heavenly! Add the prawns and toss them around until they just turn pink, after which immediately lower the fire and pour in the tomato sauce or blended diced tomatoes. Add the sugar and salt one spoonful at a time, tasting the sauce after each spoonful added, adjust the amount you add in according to your liking. Stir the sauce around for a couple of minutes. Spoon in 1 tablespoon of Mascarpone at a time and mix each tablespoon in gently and thoroughly. Let the sauce simmer. When the pasta is al dente, combine with the sauce in the large skillet until every single strand of spaghetti is coated with the thick sauce. Serve with Parmesan cheese sprinkled on top.
