Carrot, Apple and Ginger Smoothie

No, I am not obsessed with smoothies, while I enjoy sipping on these fabulous icy drinks I don't think about them ALL the time as you would if you were "obsessed" with something or someone. With the delirious, close to driving-me-crazy hot weather we have been experiencing, smoothies are on my mind only 80% of the time, the other 20% of brain space belongs to sub-zero temperature beer. I just love when I can just reach into my fridge at the spur of the moment and whip up something as delish as this Carrot, Apple and Ginger Smoothie. Truly, all the necessary ingredients are definitely readily available at your disposal! I didn't have the baby spinach or kale required for the Green Smoothie, and I had just run out of strawberries for the Strawberry Banana Smoothie, and thus the Mint-infused Carrot, Apple, and Ginger Smoothie with Lemon juice and Chia seeds was born! Carrot Apple Ginger Smoothie Yep, that is the actual name of this Smoothie, but I couldn't possibly officially name it that, so I got the three main ingredients in the title of this post instead.

Every time I think of adding carrots to my smoothies, I find it imperative to pair it with ginger. I have no idea why that is so, but somehow in my subconscious I just know that that pairing works perfectly. I absolutely adore ginger, for its taste as well as its millions of health benefits - besides using Ginger in cooking to expel the nasty smell of fish and other meats, I like to boil ginger in order to infuse it into dessert broth, and then throw in chunks of gorgeous sweet potato, OR with sweet dumplings. After downing a bowl of such gingery goodness, you're sure to burp a little (or a lot!) - get rid of all that gas in your tum that is in the way of you eating more good foods!

 

 

This Smoothie has all the elements to tantalise your taste buds - the lemon juice adds the pop of sourness, which is balanced by the sweetness of the apple, then of course you have the spice and heat from the ginger. Throw in at least 6 ice cubes to thicken it up as this smoothie lacks any creaminess that avocado or bananas would bring, and of course the ice cubes is a necessary recourse for survival in this terrible hot weather. Take note not to make the mistake I made previously when adding ginger to smoothies by throwing in the entire knob to blend together with the other ingredients, what you will get is a smoothie cut by pieces of fibrous ginger and mind you, these fibrous strands do not work well with straws, or with any gaps between your teeth, neither does it help in the taste department because they taste dreadful, having all the delicious ginger juice already squeezed out.

Carrot Apple Ginger Smoothie

 

Get that blender out and start whizzing!

You will need~ - 1 small red apple (roughly cut up) - a handful of red seedless Grapes - 1/2 a medium sized Carrot or 1 small sized Carrot (roughly cup up with the rough exterior skin removed) - 1 1/2-inch thick slice of Ginger (skin removed) - 1/2 a Lemon (juiced) - 1/2 cup of Water - 6-8 Ice cubes - 4-6 Mint leaves - 1 tablespoon of Apple Cider vinegar (optional) - 2 tablespoons of Chia seeds (optional)

Prep the fruits by giving them a thorough wash, and then roughly cut up the apple, leaving the skin intact (fibre), and remove the skin of the carrot and roughly cut that up too. Juice up half a lemon and pour that into the blender with the 1/2 cup of water, then throw in the rest of the ingredients, except the ginger. When the ingredients have been blended into a watery consistency, take a small grater and gently grate the ginger in. Turn the blender on for about 10 seconds to mix the ginger in thoroughly with the rest of the smoothie. Before serving, mix the mint leaves into the smoothie and let them sit for a couple of minutes. Wonderful!
