Noodles can NOT be made any simpler and any more delicious. This idiot proof recipe for black sauce noodles with fried garlic and spring onions is my go-to recipe for a quick lunch on busy days when there are a butt-load of chores to be done and, dirty and hungry children to clean and feed, or on lazy days when all I want to do is anything that does not result in me slaving over the stove with sweat dripping down my forehead. It is unbelievably quick (all you need is 10 minutes or less!), made with only 3 main ingredients, mad simple and insanely yummy.

I love noodles - I can eat noodles everyday and done in every way possible. For myself, the key to what makes a bowl of noodles extra delicious is how the noodles are cooked, and it is when the noodles are cooked to a perfect al dente - a little springy and just slightly hard in the middle - now that is when, BAM!, this is a good day because I have a perfect bowl of noodles to devour.

When cooking your noodle of choice for this black sauce noodles, take note to watch your noodles as they are cooking, even the mere 10 seconds of over-cooking will ruin the whole dish. What I do is I let it cook for at least a minute and a half in boiling water, then I will taste a bit of the noodles every 15 seconds after that and when it is perfect, I turn off the heat and remove the noodles from the pot and into a strainer immediately.

This really is a wonderful dish for busy days and it also is a great addition to any bento lunch box as it tastes great even when cold. I hope you enjoy this recipe as much as my family does!

  Black Sauce Noodles with Fried Garlic   Prep time: 3 mins  Cook time: 5 mins  Total time: 8 mins  Serves: 2      Ingredients:   · 200g Egg Noodles  · 3 cloves Garlic  · 2 sprigs Spring Onions   For the sauce:   · 3 tablespoons Soy Sauce  · 1tablespoon Dark Soy Sauce  · 2 teaspoons Sesame Oil      Instructions:   1) First, set a large pot of water to boil and add the noodles in to cook.  2) While the noodles are cooking, finely chop up the garlic and roughly chop  up the spring onions, and set aside.  3) Take note to taste your noodles at this point to ensure that they do not  overcook while you are preparing the fried garlic.  4) To make the fried garlic, heat up a small skillet with 2 tablespoons of  vegetable oil.  5) When the oil is hot, add the chopped garlic in and spread it out on the oil to  allow it to cook evenly, turn the heat to low and let the garlic fry until a light  brown colour, at which time turn the fire off and transfer the fried garlic out  onto a small platter.  Because the oil is really hot, the garlic will continue cooking even when  removed from the skillet and by the time the oil has cooled down, you  should have a platter of beautifully caramelized fried garlic.  6)  Check on your noodles again, and when it has cooked perfectly to al dente,  pour out into a strainer and run cold water over it.  7) Set the noodles aside and start mixing your sauce - 3 tablespoons soy sauce  (for taste), 1 tablespoon dark soy sauce (for colour), 2 teaspoons sesame oil  (for its fragrance) and the fried garlic + oil.  8) Toss the noodles in the sauce and top it off with the chopped spring onions  and some sliced red chillies if you like some heat to go with the noodles.  Enjoy!      Notes   If you like your noodles to be extra spicy, chop up a couple of birds' eye  chillies and fry it together with the garlic
